Description
Tasting notes: Lychee, Peach, Osmanthus Honey El Paraiso Lychee is a Colombian Castillo coffee grown at 1,930 metres above sea level, with a distinctive fruit and floral profile. This 2025 harvest lot brings together the delicate sweetness of lychee, the soft fruit character of peach, and the fragrant, honey-like notes of osmanthus. Its flavour profile offers an expressive combination of tropical fruit, stone fruit, and floral sweetness, making the processing story an essential part of this coffee’s identity. The coffee undergoes a double anaerobic fermentation followed by a thermal shock wash. Whole cherries are first washed and fermented anaerobically for 48 hours. After pulping, a second fermentation takes place with the mucilage intact for a further 96 hours. The coffee is then washed with hot water followed by cold water, before completing a controlled drying phase lasting 34 hours. This carefully managed sequence is central to the lot’s preparation and accompanies its distinctive lychee, peach, and osmanthus honey tasting profile.
