Tasting notes: Pink Lemonade, Raspberry, Floral Faver Ninco’s Pink Bourbon comes from Finca Costa Rica in Santa Maria, Huila, Colombia, grown at 1,900 metres and processed with a washed method. Carefully hand-picked cherries undergo an initial 24–30 hour fermentation, followed by 60–80 hours of anaerobic fermentation after pulping, then are washed with a thin layer of mucilage left to enhance sweetness and fruit character. The cup is bright and expressive, combining sweet pink lemonade and fresh raspberry with delicate white florals. Its crisp citric acidity, light body, and pronounced floral finish make this a vibrant expression of Pink Bourbon.
