Tasting notes: Cherry Blossom, Lime Zest, Red Slushee, Pineapple Edinson Argote’s journey from working at a local coffee buying station to becoming a specialty coffee producer began when he discovered his passion for coffee in Acevedo, Colombia. In 2018, Edinson and his partner Luz Angela acquired La Quebradita in Timaná, Huila, where they have developed the farm into a hub for coffee processing and agricultural experimentation. This blend brings together two distinctive lots: an advanced natural Chiroso and a washed Maragesha, showcasing Edinson’s approach to developing unique and repeatable sensory profiles. The Chiroso contributes bold red-fruit character through an extended natural fermentation involving beer wine yeast, while the Maragesha undergoes multiple stages of anaerobic and aerobic fermentation before being washed and dried on raised beds. Together, they create a vibrant and playful cup with notes of cherry blossom, lime zest, red slushee, and pineapple. At 1,850 masl, this coffee balances intense fruit sweetness with floral complexity and a refreshing citrus character.
