Alex Metrio - Colombia - Chiroso Washed

This coffee is very special to me, because someone who helped me immensely early in my coffee roasting and green buying journey recommended me this coffee. Waiving my right to a sample, I fully trusted her palate and our alignment and it has paid off immensely and now you all get to enjoy the result.  This coffee comes from El Silencio, a farm in Urrao at 1800masl. This farm is run by Alex Metrio. Alex, along with the team of pickers, harvests only the ripest cherries. Then, the cherries are placed in the sorting area at El Silecio farm, where the sorting team hand-sorts and floats them to remove any low-density, underripe, or defective cherries. Afterwards, the cherries undergo a 30-hour underwater fermentation, a critical step that enhances the coffee's flavor profile. This controlled fermentation allows the sugars, organic acids, and other compounds within the cherries to break down gradually, stimulating the development of a sweet and bright profile.  The 30-hour fermentation period is carefully calibrated to strike the perfect balance between developing flavor complexity and preserving the coffee's inherent qualities. This results in a harmonious balance of sweetness and acidity, giving our washed coffees a bright and lively character. We taste: Exceptional sweetness of cane syrup followed by equal measures of creamy orange blossom florals with confectioner candied sweetness, like an orange blossom infused almond marzipan. These flavors are carried by a silky but substantial mouthfeel giving this coffee structure from hot to cool. As the cup cools, expect a delicate lavender mixed with punchy peach candy sweetness and vibrant fresh peach acidity.
