Tasting notes: Milk Chocolate, Citrus, Cherry El Huabal is a washed Peruvian coffee sourced from the renowned specialty coffee terroir of El Huabal, where volcanic soils and a humid, temperate climate provide excellent conditions for Arabica cultivation. This lot is produced through Café Solidario, a cooperative established in 2017 that has grown from 85 producers to 255 members across Jaén, San Ignacio, and Cutervo, with a focus on traceability, sustainable agriculture, and improved livelihoods. The coffee brings together a blend of traditional varieties grown throughout the region, including Typica, Caturra, and Bourbon. The coffee undergoes a two-stage fermentation, beginning with 15–18 hours of fermentation in cherry before being depulped and fermented for another 40–48 hours. This process helps develop the coffee’s balanced acidity and aromatic complexity before it is washed. In espresso, El Huabal leans toward a rounded profile of milk chocolate, while pour-over brewing brings out brighter layers of citrus and cherry. Its combination of sweetness, clean acidity, and approachable fruit character makes it versatile across both brew styles.
