Tasting notes: Red Currant, Berry Yogurt, Almond Faver Ninco’s Papayo comes from Finca Costa Rica in Santa Maria, Huila, Colombia, grown at 1,900 metres and processed with yeast inoculation and washing. Carefully selected cherries first ferment for 12–14 hours before being pulped and dry fermented for 72 hours with a yeast concentrate, followed by controlled drying. This rare Colombian variety produces a complex and creamy cup, combining sweet red currants and tart red fruits with creamy vanilla yogurt and delicate almond notes. Its fruit-forward sweetness, rounded body, and layered character make this a distinctive expression of Papayo.
