Origin: Colombia Region: Quindio Farmer: Manuel lópez Varietal: Castillo Processing: Peach Co-Ferment Elevation: 1610-1850 masl Profile: fruit peach Price per lb (shipping + greens): $12.79 About the coffee: Cherries are harvested, floated to remove defects, then oxidized for 24 hours before dry pulping. The pulped coffee is placed in sealed containers with peach juice and yeast, where it ferments for 72 hours. After fermentation, the coffee is packed into GrainPro bags and stabilized for 20 days. Roaster's notes: One of the few coffees that actually tastes like the fruit. It’s not too artificial, and has some green bitterness in the finish to resemble as if it were picked from the tree.
