Origin: Peru Region: Cusco Farm: Sufaypata Farmer: Rosa Domingues Ramos Varietal: Gesha Processing: Washed Elevation: 2050 masl Profile: warm spices, mango Price per lb (shipping + greens): $23.71 About the coffee: The 12x36 washed process begins with 12 hours of dry fermentation in the tank after de-pulping, followed by a full wash and submersion for up to 36 hours. The result is a cup defined by clarity — bright acidity, distinct fruit notes, and nothing in the way. Roaster's notes: Our first ever offered Peru lot. I deem it a comfort coffee, clean fruit with layered warm spices. In the finish, there's some white florality mixed in. A complex washed coffee. Brewing Notes: V60 Water temp: 90-93C Brew recipe: 0. 18g grounds a tad coarser 1. 60mL bloom (for 40 seconds) 2. 60mL second bloom (until water drains) 3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides   Rest notes: I'd leave it alone for 4+ weeks if possible.  Additional Notes: Learn more about how we price our coffee here.
