Tasting notes: Apple, nutmeg, orange Elevation: 1500 m Variety: Peñasco Process: Washed Region: La Concordia, Chiapas Grown by third-generation coffee producer Gamaliel Rios Ortiz in the lush landscapes of the Sierra Madre in Chiapas, Mexico, this exceptional coffee embodies a legacy of craftsmanship and dedication. Gamaliel’s farm, Castaño, is nestled between 1,400–1,700 meters above sea level in the township of Plan de la Libertad Alta, where the high altitudes and fertile soils produce vibrant and complex coffees. This lot showcases the Peñasco variety and features a traditional washed process.
