A sweet and harmonios washed pink bourbon with notes of nectarine, strawberry and caramel! Origin: Colombia, Quindio Farm: La Divisa Altitude: 1600-200 masl Farmer: Diofanor Ruiz Variety: pink bourbon Process: washed; Notes: strawberry, nectarine, caramel, black tea, florals, honey, banana Brewing: This coffee works very well brewed as filter coffee Rest: at least two weeks Some pink bourbons are very crisp and bright and some are sweeter and balanced. This fits into the latter sort and we're absolutely delighted with it! The cherries were selectively hand-harvested, then hand-sorted and floated at La Divisa's sorting area to remove any low-density, underripe, or defective cherries. The cherries then underwent a 30-hour underwater anaerobic fermentation following Cofinet's protocol, designed to develop a sweet, bright profile while preserving the coffee's inherent character. After fermentation, the cherries were pulped, the mucilage thoroughly washed away, and the coffee spread on parabolic dryers, where Diofanor monitored it closely to reach a target moisture content of 9.5–11%. 10oz/285g bags
