A very different Brazilian coffee! Medium acidity, high sweetness, clean cup. Farm: GuarirobaProcess: Double Fermentation* Variety: pink bourbon Producers: Gabriel Lamounier Vieira and Elisa Paiva Lamounier Region: Minas Gerais, Brazil Elevation: 1200 masl Notes: florals, sweet ginger, pepper, chocolate and more! Brewing methods: This coffee is roasted light with filter brews in mind. It can definitely also work well for espresso, but if you’re looking for that more ‘classic’ Brazilian profile, then I would choose the Fazenda Sao Domingos – also available on my site. When you grind this coffee you are immediately greeted by a waft of delicate spices. Up front you have florals and spice. The finish has some more familiar chocolate notes that one might expect from a Brazilian coffee. When profiling the roast, I found that slightly darker roasts elevated the mouthfeel and chocolate while very light roasts boosted clarity and florals. My iteration leans a little to the latter while preserving the sweet chocolate finish. *The coffee undergoes an initial hydraulic separation, followed by fermentation in a bioreactor for 36 hours with the addition of carefully selected and isolated microorganisms sourced from the same lot. After pulping, the coffee undergoes a second fermentation for an additional 36 hours. Drying is conducted over approximately 20 days to ensure optimal flavor development. 10oz/285g bags
