About the producer This coffee comes from Finca El Paraíso in Piendamo, Colombia, known for precise, highly innovative processing. The Castillo cherries are ozone-washed, pulped, and combined with their own fermentation leachates to create a culture medium, then undergo a 72-hour double anaerobic fermentation submerged in that solution, followed by a signature thermal-shock process that builds sweetness and structure. The fermentation is inoculated with kumis, a traditional Colombian fermented milk drink containing naturally occurring Lactobacillus. The finished, dried coffee bean contains no milk or dairy products, but we're noting the starter culture here for full transparency. What makes this coffee stand out The cup is strikingly spice-forward, with a natural cardamom-like lift and a buttery, confection-like sweetness — all achieved without additives. It's a rare flavor profile in coffee and one of the standout expressions of Castillo coming out of this farm. Our light roasts develop their best flavors after 2 weeks, peak around 4 weeks, and remain delicious for weeks after. For extended freshness, consider freezing the coffee to preserve its quality even longer.
