Tastes Like Dried Fruits • Green Apple • Fudge Manhattan's Take: This coffee is grown at El Ingenio in El Salvador by the Urrutia family, transported to San Antonio wet mill run by Enrique Urrutia. Cherries pass through calibrated depulping lines to separate ripe cherries before undergoing a 13–14 hour dry fermentation. Washed and placed in a wet fermentation tank before drying via guardiolas and brick patios based on weather and volume. On the cupping table, expect notes of dried fruit, green apple, and fudge, complemented by a smooth, rounded mouthfeel. Available now for filter and espresso.
