Description

Tastes Like Black Tea • Dark Berries • Citrus MOK's Take: Sidamo is a region in Southern Ethiopia famous for its delicious coffees. This lot is a grade 2 heirloom produced by various smallholder farmers who typically own less than 5 hectares, with cherries selectively handpicked and delivered to the Ayla Washing Station. At the station, cherries are sorted, depulped, and fermented for about 24 hours, then graded in washing channels by density, soaked in clean spring water to remove remaining mucilage, and laid out to dry on raised beds under shade for 10 to 14 days. This level of labour intensity for a grade 2 coffee leaves no doubt about the high cup quality. To discover these flavour profiles we recommend soft mineral water with a low HCO3 (bicarbonate), aiming for total hardness below 140 mg/l.
