Flavour Profile:  Elderflower, Candied lime & Cocoa Nibs Rene Casa is part of the new generation of farmers actively engaging the specialty coffee market. He works in the community as the local pastor in Pacaybamba and is currently working with other producers in the community on reforestation of former corn crops. This will ensure the quality production of shaded coffee in the years to come. Consistently improving the quality of his processing, he took first place in the Incahuasi Cup Competition in 2023 for his Geisha lot. Rene works mainly with the Arabica variety of Caturra, with some Typica and Bourbon, which are highly regarded in the specialty coffee community and are harvested with care in Incahuasi. All varieties are separated at harvest to make micro-lots of each variety and this year we chose his Caturra variety to create this unique farmer micro-lot. Geisha Inca is the common name for the SL9, or Ethiopian heirloom, that has mutated in the district for decades. They were widely neglected due to their low yield but now with the experienced quality management Rene is planting more of these wonderful varieties at even higher altitudes, producing excellent results and beneficial returns to the community. The members of each committee in the Incahuasi Coop share the same Inca ancestry and culture. Traditionally the Incas share the working processes amongst the community and today the members of the Inchuasi Co-op still employ the methods of Minka– to share work on infrastructure in the community, and Ayni– to share work and collaborate between farmers on a day to day basis. Through this collaboration of work the practices become refined amongst each farmer and perfected in the Inca tradition.
