El Salvador - José Vasquez - El Aguacatal - Pacas - Washed Process

We don't buy much coffee from El Salvador, but when Mark from Caravela hit us up about this lot, we jumped at the chance. This coffee comes from José Vasquez and is a separation of one hundred percent Pacas varietal. This is evident in the cup quality and clarity, with this coffee having a consistent expression from hot to cool and a clear and bright acidity. This lot represents the best of the coffee that El Salvador produces. Pacas is a natural mutation of Bourbon which occurred in El Salvador. It, like many similar mutations popular across the Americas, contains the gene for plant "dwarfism" which means that the tress are easier for pickers to harvest; as less coffee is out of reach. These types of plant are a favourite amongst both farmers and buyers because of the balance of cup quality and usability on farms.
