Whole Bean Roast: Medium Recommended Rest: 2-3 weeks from roast date Tasting Notes: apple pie, milk chocolate, hazelnut Origin Details Region: Cusco, Peru Elevation: 2000m Producer: Agustin Ccasa, El Progresso Process: Washed Variety: Bourbon ABOUT THIS COFFEE AND PRODUCER Agustín and his wife dedicated their lives to farming for the past 15 years, inheriting the trade from their ancestors. Their extremely isolated farm only grows bourbon and is situated at an altitude of 2,000 meters. Blessed with a tropical climate, it is possible for them to enjoy an excellent crop of coffee year after year. For Agustín, selective harvesting and shade drying are the keys to achieving the best results. With these techniques and ancestral knowledge, Agustin has managed to place in multiple specialty coffee competitions in Peru. WHY WE SELECTED THIS COFFEE We're excited to introduce another high quality, sweet coffee from Peru, this time working with Agustin Ccasa of El Progreso for the first time. It's rare to come across a farm growing Bourbon exclusively, especially at this altitude and with the quality to place competitively. This lot stood out to us for how well the varietal's natural sweetness comes through, particularly with a more developed medium roast profile. The cup opens with lots of sugary apple pie, followed by a velvety milk chocolate character that gives the coffee a soft, rounded texture. As it cools, a touch of hazelnut emerges in the finish, adding just enough nuttiness to complement the sweetness. It's an easy coffee to come back to, whether brewed as a filter or pulled as espresso. A straightforward, sweetness-forward expression of Bourbon that works especially well as an everyday coffee.
