Description
El Vergel Semi-Washed Whole cherries undergo a 36-hour pre-fermentation before being depulped and fermented anaerobically in their mucilage for 120 hours. The coffee is dried mechanically for 30 days to 11% moisture. The result is a vibrant cup with sweet citrus acidity and notes of white grape, jasmine, and sweet tea. ⚡️ El Vergel Adv Natural Ripe cherries undergo a 12-hour pre-fermentation followed by 24 hours of anaerobic fermentation to develop complex fruit flavors. The coffee is dried in a mechanical silo, then on raised beds, to 11% moisture. The result is a sweet, dynamic cup with notes of purple grape, blackberry, and brown sugar.
