Menu superstar Jorge Rojas brings us another gem with this just-landed chiroso. This one is a bit more "out there" and a fun, fruit punch delight. We love the big blackberry and mandarin orange flavors and its ripe, saturated quality. It's a bit process-forward but we love it. Jorge grew this chiroso at Finca El Jardín in Tolima, one of his four farms. This coffee was floated to remove defects and then pulped immediately. It then fermented without water for just 16 hours. Then it was fully washed and moved to marquesinas to dry, with regular rotation of the coffee to ensure even drying.  As a reaction to the increasing complexity around novel processing techniques, Jorge has opted for a more traditional method with this coffee.
