Kotowa Las Brujas Geisha Clean Natural

This year is the first year we're buying from Kotowa Farms in Boquete, and we're absolutely thrilled to offer this amazing Geisha from their Las Brujas farm lot 26-094! This lot in particular is their outstanding Geisha, which was processed with a "Natural" process, although the result in the cup is something that reminds us much more of a washed. We had confirmed with the farm that it was infact a natural, even though it does appear more washed. This coffee was picked on the 3rd of February, and left in bags overnight before being laid straight onto raised african beds, spread into a thin 5cm layer in cherry. It was dried there for 15 days being turned twice a day to keep this lot clean, and then finished in a rotary drier for 48 hours.  You can expect Jasmine, Apricot, and Brown Sugar in a elegant, and clean cup that's full of jasmine and tea like notes. This one is really special and is one of the highlights from Panama for us this year. We've roasted in quite light, so letting this lot rest longer will give better results.
