Sidama (which is still sometimes referred to with the prior spelling of Sidamo) coffee is prized as being home to some of the best coffees in Ethiopia. The producers of the region take immense pride in their coffee and many of the small farms are passed down generationally. The people of the region are of the Sidama ethnic group and have their own distinct language and traditions. The group sought additional autonomy and Sidama was created as it’s own state in 2019.  The Bochessa community, or kabele, is an agricultural community in the mountains of Sidama. Coffee is the primary economic crop, with false banana tree, also called enset, cultivated as both a shade crop and subsistence crop. The false banana does not produce an edible fruit, but the leaves, stems, and roots are staples in the diet of the region.  The community’s washing station was built in 2022 on 1.5 hectares of land. There are 823 farmers bringing their coffee cherry here to produce a total annual volume of over 500 tons of finished green coffee. Farms are very small. Producers cultivate on parcels up to 2 hectares, with some being as small as one tenth of a hectare.  This lot is natural processed - meaning the fruit is not removed from the inner seed (the coffee bean) until after it is fully dried. The cherry is sorted and washed at the washing station, then put out to dry for 21-27 days on raised beds. The longer drying time is essential because the full fruit is left on and it must be carefully and fully dried to keep fermentation controlled and maintain clean flavors in the finished product. At the same time, natural drying with the fruit intact adds characteristic body and sweetness to this coffee from Bochessa. We taste jammy berry and orange marmalade as well as vibrant tropical notes like pineapple. We don’t do many natural coffees here at Ruby, and this Bochessa Natural is one not to miss! 12 oz / 340 g.
