Mexico, Chiapas Varietal: Caturra, Costa Rica, Marsellesa, Typica Process: Washed Altitude: 1200 - 1800masl Green Grape, Digestive Biscuit, Vanilla Launched by Covoya in 2024, KI SAYA is a specially curated organic washed coffee from the fertile, tropical region of Chiapas, Mexico, specifically cultivated by smallholder farmers in Tenejapa near San Cristóbal de las Casas. Named after the Mayan words for "tasty" (Ki) and "nature" (Saayab), KI SAYA honours the resilient indigenous heritage of the region, symbolised by the native Plumeria rubra flower that thrives against all odds. Sourced exclusively through the Café Delas programme, every lot is 100% produced by women farmers, directly reinvesting sales profits into gender equality initiatives and community empowerment. Grown under native shade trees in rich volcanic soil, the cherries undergo careful selection, a 12 to 17 hour fermentation, meticulous patio drying, and rigorous hand sorting to ensure exceptional purity.
