Tastes Like Milk Chocolate • Red Plum • Hazelnut Tanat's Take: Panama doesn't only produce superb Geishas: in the middle of this obsession with cups full of clarity and purity, there are coffees that are much more direct and indulgent while staying balanced. This washed Caturra from Jamison Savage is one of them. Jamison Savage's farm quickly became one of the most talked-about projects in the country. His approach rests on variety, terroir and processing, with a desire to understand what each can bring to the cup; over the years he has worked Caturra, Catuai, Bourbon and Geisha, with processes ranging from traditional washed to more experimental fermentations. For our lot, the washed processing of the Caturra aims to bring forward the precision and clarity of the variety without moving too far from the fruit. The result is less demonstrative than a fermentation-driven coffee, but more readable. The cup starts on something indulgent, milk chocolate, then comes red plum with that lively, elegant sensation found in Kenyan coffees. Finally the notes widen towards hazelnut, leaving a soft and generous mouthfeel. A Caturra that doesn't try to play at being a Geisha, and that's a good thing. Roasted for espresso.
