The farm has been producing specialty-grade coffee for six years. Dionel named his farm El Roble in tribute to several ancient oak trees that still stand on the land. Dionel is a third-generation coffee farmer of the Chilito family. He made up his mind to switch up cultivated varieties to test the benefits brought by alternatives to traditional planting methods. Guided by a neighboring coffee grower and driven by the goal of boosting income, he began refining his cultivation and post-harvest processing techniques. He lives and works on the farm alongside his wife and two daughters. Dionel carries out selective cherry picking with rigorous quality standards. Defective cherries are eliminated via flotation before fermentation and sun-drying. The farm enforces extremely strict sanitation rules, with signage posted such as “No Food, Drinks or Smoking Allowed”. The water utilized for washed processing is exceptionally clean. After undergoing stringent sorting, ripe coffee cherries are depulped and fermented wet for 36 hours. They are then laid out to dry for 17 days in covered drying patios fitted with plastic roofing, shielding the beans from direct sunlight and rainfall.
