Description
Origin: Ethiopia Region: Bensa, Sidama Station: Alo Coffee-Chilaka Producers: Tamiru Tadesse & Messi Altitude: 2300–2350 masl Variety: 74158 Crop: Picked in Jan. 2026 / Arrived in April. 2026 Process: Anaerobic Washed Notes: Lychee, Apricot,Bergamot, Oolong tea About farm:Alo Coffee was founded by Mr. and Mrs. Tamiru. Having worked in the coffee industry for years, Tamiru is well aware of unfair pricing and undervaluation issues faced by coffee farmers. The inaugural Ethiopia Cup of Excellence (CoE) competition in 2020 inspired them to launch their business. In 2021, their specialty coffee originating from their hometown village Alo claimed the national championship on its competition debut, strengthening their commitment to crafting world-class Sidama specialty coffee. About process:Once evenly ripe cherries arrive at the station, they undergo flotation sorting and depulping. The coffee is then placed in sealed fermentation tanks for 48-hour anaerobic fermentation. After fermentation, the beans are thoroughly washed and spread on African raised drying beds for 21 days of drying. The cherries are turned every hour to achieve uniform drying. Shade covers are deployed during intense sunlight to shield the cherries from direct sun exposure. When the moisture content reaches 10–11%, the coffee is moved into storage.
