Whether you brew it as filter or espresso, somehow there’s always too little in the cup. But that’s the only downside of this coffee! The natural process brings together a lovely interplay of chocolate and fruit notes (including a bright, fruity acidity), a medium-bodied, distinctly velvety mouthfeel, and a round finish that stays with you for quite a while. A strong contender for your next favourite coffee – and not just if you’re a fan of Ethiopian naturals! About the processing: The cherries are first sorted and floated, with unripe cherries being removed as they float to the surface. They are then dried in the shade for one day before being spread out on raised African beds, where they dry for 20–30 days until the desired moisture content is reached.
