Roasted 7/27 Anaerobic washed Geisha with intense florals and tropical fruits Variety: Geisha Process: Anaerobic washed Country: Colombia Region: Planadas, Tolima Altitude: 1,850 masl Producer: Jorge Elias Rojas Vásquez Tasting Notes: Green grape, tangerine, osmanthus Production This washed Geisha was picked and floated to clear impurities, then pulped immediately. It fermented in mucilage for 48 hours dry without water. A carefully controlled three-step drying process in the dry-house "marquesina" preserved volatile aromatics and fruity flavors. The plastic roof was covered with poly-sombra netting to slow drying. After 5 days the coffee was stored for 24 hours, repeated at days 9 and 13, extending drying to 15 days total without developing funky notes. Roaster Notes Jorge Elias Rojas Vásquez has been a specialty producer from a very young age, and is part of the ASOPEP association of farmers in Planadas. This anaerobic washed Geisha shows his dedication to meticulous production. A carefully controlled three-step drying process ensured plenty of floral aromatics are present alongside intense tropical fruits in this superbly clean all-rounder. Ultralight verging on hyperlight in this cup, notes are very clean and crisp, sweetness is barely present, and florals dominate the second half of the sip. Acidity is tropical with juicy sweetness, leans floral in balance, and has a highly floral linger. Recommended rest: 40+ days.
