Growers: Smallholders in Cajamarca Process: Washed Varieties: Catimor, Caturra, Bourbon & Typica Altitude: 1,650 - 1,800 MASL Importer: Cafe Imports This coffee comes through Lima Coffees, a growers' association in Jaén, in the Cajamarca region of northern Peru. Rony Lavan founded it in 2016 with a handful of local producers after years working in quality control for one of Peru's biggest exporters, where he watched good coffee from small farms disappear into commercial blends. He set up Lima Coffees the other way around, with membership based on cup quality rather than volume. Every member farm is certified organic and Fairtrade, the association invests in fermentation and drying infrastructure on those farms, and it has grown from around 300 producers to over 800.
