The fermentation protocol is designed to accompany the beans, never to mask their identity. This Elora Blood Yeast lot is the perfect illustration. The cherries are placed in natural anaerobic fermentation for 72 hours in sealed tanks with selected yeasts to steer the fermentation in a controlled way, followed by a slow drying that preserves the aromatic richness developed during the process. In the cup the opening is soft and enveloping. Honey brings a satin floral sweetness. Very quickly that satin is taken up by grapefruit, breathing in a vibrant freshness with a light bitterness structuring the whole. Then finally comes passion fruit, bursting and juicy, stretching out to give a well-integrated tropical acidity. The cup reveals, taken as a whole, a balance between intensity and legibility.
