For our RF8 Natural lot, the cherries ferment naturally in airtight bags submerged in a river, before a slow drying that preserves the aromatic richness developed during the process. In the cup, the coffee gives a sensation of softness. Cherry brings a fruited, brilliant sweetness, quickly followed by dried rose; the cup takes on a floral dimension, delicate and perfumed. Finally, bubblegum extends the sweetness into indulgence, even toward confectionery. A brilliant, surprising and balanced coffee.
