Description
Mayor is a product intentionally developed through the work we do at the Lab. Every Wednesday, we taste the previous week's production roasts to quality check and adjust as needed. This profile began in our Bright Series as Abuelos (now retired). While the unique washed profile held up at a lower end temperature, we saw potential to extend development time for added sweetness and a fuller body. After some trial and error, Mayor was born and it remains our most popular coffee to brew at home. This new crop comes from the Chiapas region of Mexico. Nestled near the Guatemalan border, Chiapas offers high altitudes, volcanic soil, and a lush tropical climate – all ideal for growing our favourite varietals, which shine beautifully in a washed profile. This lot, a blend of Costa Rica, Marcellesa, Typica, and Caturra, stands out with notes of chocolate syrup, dates, and molasses cookies, rounded out by a sweet, silky mouthfeel. Mayor is a labour of love, and its loyal fanbase proves we got this one right ;)
