Ethiopia - Habtamu Fikadu Danche 74110 and 74112 - Washed Process

Description

There are two versions of this coffee available: one produced with the 3KG Roest P3000 and one produced on the Roest L200. The former was roasted on 8/24. Both profiles greatly benefit from 6 weeks of rest. Started in 2015 by Aaga Dinsa, Habtamu Fikadu Aga, ‘Kuri Mountain Coffee’, originated in the Kuri kebele of Ethiopia. Habtamu buys cherries from farmers in various kebeles and possesses stations in Wolega, Guji and Jimma. They possess an organic certification through Fair for Life, where $0.12 per pound of exports for the as well as 5% of company profits are donated to a development fund that supports local communities through transportation, food, and healthcare infrastructure.  For this lot, Habtamu purchased cherries from the Danche kebele and washed the coffee at a processing station in Danche. This lot consists of two JARC varietals, 74110 and 74112. At the washing station, cherries are sorted, pulped, and then have 90% of their mucilage removed. The beans are then fermented for 24 hours before they are hand washed and dried using indirect sunlight. In the cup, I find intense white florals, crisp melon, and a delicately creamy body like white tea.
