Named after the wild blackberries that grow throughout the region, the farm sits at an elevation of 1,600 to 1,800 meters above sea level, where Heber has dedicated this specific lot to the prized Pacamara variety. Embracing a highly sustainable approach to reduce water consumption and eliminate waste, the farm meticulously processes its coffees through a variety of methods, including Washed, Natural, and Honey. Depending on the lot, cherries undergo tailored fermentation regimens in concrete tanks or bags before being carefully sun-dried on raised beds for up to 22 days. This expert, sustainable processing highlights Heber's deep commitment to quality and the rich coffee-growing heritage of his family.
