Farm: Recinas Producer: María Belén Diaz Region: Acevedo, Huila, Colombia Process: Washed Elevation: 1,780 MASL Varietal: Papayo Tasting Notes: Peach, Strawberry, Tropical Fruit, and Citrus We are excited to introduce something truly special: an exceptional single-estate micro lot from María Belén Diaz at Finca Recinas in Acevedo, Huila, sourced through our partners at TYPICA. With only 23 bags produced, this is one of the rarest and most limited coffees we have ever offered. María Belén is a lifelong coffee farmer, the daughter of second-generation producers who had her hands in the work from a young age. Over the past 25 years she has dedicated herself to cultivating and maintaining her own crops, and after receiving formal cupping training in Pitalito in 2008, she turned her focus toward exotic varieties and experimental processing. This lot showcases that expertise. The Papayo variety cherries are harvested ripe, submerged in water to remove floaters, then fermented in bags for 36 hours before mechanical pulping. From there, the coffee undergoes an additional 36 hours of dry fermentation in an aerated tank, followed by two clean rinses and a slow 15-day dry in a covered marquesina. The care in every step shows up in the cup. Bright and tropical up front with melon and papaya, this coffee transitions into soft stone fruit sweetness of peach and nectarine. As it cools, a sweet and tart strawberry character emerges alongside a citrus finish that lingers. It's fruit-forward, clean, and vibrant in a way that few coffees are. This is a premium offering and carries a higher price point than our typical single origins, but once you taste it, you'll understand why. The combination of an exotic varietal, a meticulous producer with decades of experience, and a micro lot this small is something we rarely get the chance to bring to our shelves.
