Origin: Ethiopia Region: Guji Locality: Shakiso Producer: Ture Waji of Sookoo Coffee Altitude: 2173 meters Process: Natural sundried Varieties: Gibirinna 74110, Serto 74112 Tasting notes: Strawberry, Meyer lemon, milk chocolate Ethiopia Bookissa is a natural dry processed coffee produced by our partners Sookoo Coffee in Shakiso, Guji zone. It used to be that out of all the coffees we buy from Ethiopia each year we would only buy one natural and it was always from them. It also used to be that Sookoo, helmed by Ethiopian coffee veteran Ture Waji, only produced coffee with a natural sun-dried fermentation process. Things have changed a little bit in the last few years, as we have started to buy some natural coffees from other producers in Ethiopia, and Sookoo has branched out into washed and honey processing at their two new wet mills. Still, the fact remains that Sookoo still produces some of the absolute cleanest natural coffees that we taste from anywhere, year after year. Ripe cherry is grown and picked by 31 smallholding farmers in the Bookissa woreda (village) under native shade canopy, and delivered to the Sawana processing station. After the delivery is sorted and weighed, the farmer is paid above market price and the cherry is brought immediately to raised beds to dry in the sun. These coffees are seriously some of the cleanest naturals we've ever tasted, which we attribute to excellent picking and sorting by the growers, followed by extremely diligent and slow drying in perfect conditions at the hands of Ture and his team at Sookoo. With this year's harvest of Bookissa we taste strawberry, Meyer lemon, and milk chocolate. Transparency This is our seventh year buying from Ture Waji of Sookoo Coffee through our importer Osito Coffee. We scored this lot 87.5 points and purchased 5 60kg bags for $7.40/lb FOT.
