Tastes Like Blackberry • Black Fruit • Herbaceous MOK's Take:A highly aromatic and creamy cup full of black fruit flavours like blackberry with a refreshing herbaceous finish. Finca El Alisal sits in Fundochamba in the south of Ecuador, where the Jaramillo family has grown coffee for over 60 years; since Leonidas Jaramillo took over in 2017 the farm has focused on specialty coffee and Ecuador's best-scoring varieties, including Sidra, believed to be an Ecuadorian adaptation of Ethiopian heirloom varieties. Cherries ferment in open tanks for 12 hours, then are depulped, washed, and rested on raised beds in the shade for an hour before moving to temperature- and humidity-monitored polyshade greenhouses to dry for 12 to 15 days. Expect a highly aromatic, creamy cup of black fruit and blackberry with a refreshing herbaceous finish. MOK recommends brewing as a filter on a Hario V60 at a 1:16 ratio.
