Description

This is a beautifully chocolatey coffee with a medium body, making it perfect for both espresso and filter brewing. Expect rich notes of chocolate mousse and caramel, balanced by the juicy sweetness of grapes and a sweet hint of almonds. A harmonious cup that offers depth and juiciness, no matter how you brew it. This Colombian green coffee was decaffeinated using the "sugar cane" process, which we intentionally selected due to its gentleness in comparison to other common methods and its ability to retain the coffee's distinctive qualities. This decaffeinated lot from Santa Maria was fully washed before undergoing a gentle sugarcane decaffeination process at Decafecol in Chinchiná. After harvest, the coffee is processed in the traditional washed method, highlighting clarity and sweetness. The green coffee is then sent to the decaffeination facility, where it is carefully prepared through steaming and humidification to open the bean structure. Caffeine is removed using Ethyl Acetate, a naturally derived compound from sugarcane. This method selectively extracts caffeine while preserving the coffee’s flavour integrity. After extraction, the beans are steamed again to remove any remaining residues, then slowly dried back to their original moisture content. The result is a clean and expressive decaf, maintaining the character of the coffee while offering a soft and balanced cup—without the caffeine. Cuatro Vientos is a family-run project rooted in Huila, Colombia, founded in 2018 by the Gonzalez family. Named after their first farm, the company carries deep personal meaning—especially for General Manager Yonatan Gonzalez, a third-generation coffee producer who grew up on that very land. With a background in logistics and strong ties to the local coffee trade through his father, Cuatro Vientos bridges tradition and modern structure. Working across Northern and Southern Huila—including Santa Maria, where this lot comes from—they collaborate closely with producers in regions shaped by diverse microclimates and long-standing fermentation practices. The result: coffees with a distinctive sweetness and clarity that reflect both place and people. Built on shared values, transparency, and long-term relationships, Cuatro Vientos focuses on growing together with their producing partners—step by step, harvest by harvest.
