Farm: San Gabriel Producer: Don Linarco Rodriguez Region: Palestina, Huila, Colombia Process: Washed Elevation: 1,700-1,900 MASL Varietal: Geisha Tasting Notes: Nectarine, Peach, White Grape, Bergamot, and Jasmine We're excited to share a special coffee with you: a washed Geisha from Linarco Rodriguez at Finca San Gabriel in Palestina, Huila, sourced through our partners at TYPICA. Geisha is one of the most celebrated varieties in specialty coffee, and this lot shows why. Linarco took over the family land in 2014 and moved it from casual growing to serious coffee production. He works just three hectares, and he built his skill through hands-on trial with many different processing methods and by working closely with other producers. That care shows in this lot. The cherries are picked ripe and soaked in water to remove the floaters, and then the mucilage is removed. The coffee ferments for 24 hours in sealed barrels with mucilage saved from an earlier fermentation. It then dries under canopies for 15 days and rests another 15 days to stabilize before export. The cup opens with floral aromatics of magnolia and nectarine. The sweetness is clean, with white grape and ripe peach, and bergamot and black tea give it an elegant structure. As it cools, jasmine, lily and a bright citrus note come forward and carry through a long, tea-like finish. It's delicate, layered and classic Geisha. This coffee costs more than our usual single origins, and it's worth it. A famous variety, a careful small-farm producer and a precise fermentation don't come together often, and this lot is limited.
