We are proud to continue our partnership with TYPICA by introducing this beautifully balanced regional blend from the highlands of Palestina, Huila, one of Colombia's most celebrated coffee-growing departments. This lot is sourced from a select group of smallholder producers farming Tabi and Caturra varieties at around 1,700 meters above sea level in the upper elevations of the Palestina municipality. The local microclimate sets these coffees apart from the rest of Huila, producing cups with brighter acidity, greater delicacy, and more pronounced fruit character. Each producer follows a traditional washed process. Ripe cherries rest in the hopper for 24 hours before pulping, ferment in water-filled tanks for approximately 12 hours, and are washed with two clean rinses before sun or mechanical drying. The result is a clean, well-structured cup that speaks to the care of every hand involved. In it, we're finding Roasted Almond, Milk Chocolate, Orange Citrus, and Brown Sugar. Through TYPICA's transparent supply chain, we're able to connect directly with the farming communities of Palestina and bring a classic Colombian cup, with a distinctly Huila fingerprint, to your morning.
