Roasted 9/8 Community lot of natural processed Ethiopian landrace from 35 smallholder farmers in Guji Variety: Landrace Process: Natural Country: Ethiopia Region: Guji, Shoondhisa kebele Altitude: 2,000–2,150 masl Producer: Sookoo Coffee (approximately 35 smallholder farmers) Tasting Notes: Dense cooked strawberries, ripe juicy mango, lingering citrus zest Production Shoondhisa is a community lot composed of cherries grown by approximately 35 smallholder farmers in the Shoondhisa kebele of Guji. The farms are situated between 2,000 and 2,150 masl, with cherries collected and processed through Sookoo Coffee under the direction of Ture Waji. Before helping establish Sookoo Coffee in 2018, Ture worked in quality and management roles at Mormora Estate and Guji Highlands Coffee Company. Sookoo separates its community lots according to the kebele where the cherries were grown, providing more specific traceability than a broadly regional Ethiopian lot. Roaster Notes For natural processing, ripe coffee cherries are dried whole, with the fruit remaining around the seed throughout drying. Sookoo's natural lots are spread in thin layers on raised beds and turned frequently, helping the cherries lose moisture evenly and reducing the risk of uncontrolled fermentation or inconsistent drying. We're tasting dense cooked strawberries, ripe juicy mango, and a lingering citrus zest finish. Roast color: 127.9 Filter brewing notes: We like brewing at slightly cooler temps with a tighter ratio to accentuate the structured juiciness of this coffee. Start with 1:15.5 with 203*F and adjust from there. Espresso brewing notes: We're enjoying higher clarity shots 16g in, 55-60g out in ~26sec. 6bar, no pre-infusion.
